Orange Salsa 2 large oranges, peeled, pith removed and diced (1 1/2 c) 1 large tomato, seeded and diced (1 c) 1/3 c minced red onion 1 t grated orange peel 1 t minced garlic 1 t minced ginger root 1/2 jalapeno chili pepper, minced fine (2 t) 1/4 t salt 1 T fresh cilantro or coriander In a bowl combine all ingredients except the cilantro and chill, covered, until ready to serve.
