Potato with Chicken Salad Yield 8 to 12 servings. Note: the 3 Lbs yellow fleshed potatoes 1 large whole chicken breast, cooked to your liking, seasoned as desired 1 small sweet white onion chopped 2 tablespoons fresh chopped parsley 1/2 bunch fresh chives chopped 1 to 2 tablespoons coarse grain mustard with white wine Mayonnaise to bind salt and pepper Cook potatoes by favorite method and peel when warm and cut/cube for salad. In a large bowl place the cut up potatoes, chicken cut up into bite-size pieces, onion, chives and parsley. Add enough mayonnaise to bind and make creamy as desired. Blend in the mustard and season with salt and pepper to taste. Serve warm or well chilled. Printable version: chicken02.txt.
