WATERMELON JELLY 4 cups bite-size chunks watermelon 3 1/2 cups sugar 2 tablespoons lemon juice 3 oz liquid fruit pectin Blend 4 cups watermelon pieces in blender for 1 minute on medium speed. In Dutch oven mix melon, sugar and lemon juice. Bring to full boil. Stir in liquid fruit pectin. Boil 1 minute, stirring. Skim off foam. Pour in jars and seal.
