TOMATO RELISH 20 ripe tomatoes 3 small onions, chopped fine 3 green bell peppers or green tomatoes chopped fine, optional 1/4 cup pickling salt 1 cup brown sugar, packed 1 cup chopped celery 1 1/2 pints white or cider vinegar ground cinnamon to taste 2 tablespoons white mustard seed Cut tomatoes small, drain off excess liquid and discard. Mix all ingredients together. Pour uncooked into sterilized jars and seal according to standard canning procedures in a boiling water bath. Printable version: tomato-relish.txt.
