Strawberry Syrup 4 c stemmed/halved strawberries 4 T lemon juice 3/4 c water 3 oz regular pectin (half package) 3/4 to 1 cup honey Simmer berries, water, lemon over low heat until soft and mash. Remove from heat and add pectin and honey. Return to heat and bring to rolling boil for 1 minute. If too thick, thin with a little boiling water. May use other berries as well.
