Spiced Pear Jam 2 kilos sweet, juicy pears, peeled, cored, chopped 2 lbs sugar with added pectin zest of quarter of a lemon 9 cloves 2 heaped teaspoons fresh ginger, chopped fine 1 teaspoon allspice 1 heaped teaspoon cinnamon Poach the pears in a tablespoon or so of water with the zest and cloves until soft. Mash with a potato masher and measure the puree - should be around 2 pints. Add the spices and stir them in well. Use a pound of sugar per pint of puree (approx). Boil until setting point, decant into warm clean jars. Printable version: spiced-pear-jam02.txt.
