Spiced Cherries
2 cups vinegar
8 cups sugar
5 pounds/ 2.4kg sour cherries, stems and pits removed
3 tablespoons ground cinnamon
1 1/2 tablespoons ground cloves
Use sour American pie cherries, or Morello cherries.
Bring vinegar and sugar to the boil in a large pan. Add the cherries
and simmer (a very low boil) for about 1 1/2 hours. Add the spices
and boil 5 more minutes.
Remove the pan from the heat and pour the cherries and juice into
sterilized jars. (You can boil the jars in water or heat them in
an over for 20 minutes.) Cover with a clean cloth until the jars
are cold, then seal with sterile lids. This makes about 5 litres.
Makes a great sauce to go on baked ham, smoked chicken, pork, or
any barbecued meat. Keeps very well. Just be sure the vinegar is
at least 5%.
