Pumpkin Conserve 3 cups cooked pumpkin 2 1.2 cups sugar 1/2 pound chopped dried apricots 1/2 pound raisins 2 T chopped crystalized ginger or more 1 T grated lemon rind 1 T lemon juice vanilla, optional cinnamon, optional Combine all ingredients in pan and cook over low stirring for 45 mins. Pour into 1/2 pt jars and seal. Process. Printable version: pumpkin-conserve.txt.
