Spiced Pear Jam with Pineapple
3 lbs. firm cooking pears, peeled and cored
1 orange, washed
1 lemon, washed
1 cup crushed pineapple
4 to 5 cups sugar
3 or 4 whole cloves
About 6 inches of stick cinnamon
1 one-inch piece ginger
Put the fruit through a grinder, using a coarse blade. Save the
juices. Add juice to the pulp with remaining ingredients.
Stir the mixture while heating it. Boil for about 30 minutes. Pour
into hot sterilized glasses.
As it is hard to gauge the acidity of the pear used, taste the jam
as it cooks. Add sugar or lemon juice, as needed.
