SWEET ONION MUSTARD 4 tbsp. dry mustard 3 tsp. sweet pickle juice 1 tsp. salt 3 tbsp. sweet relish 1 c. vinegar 1 tbsp. sugar 3 egg yolks, beaten 1/2 c. finely diced onions Beat mustard, vinegar, pickle juice, sugar and salt. Cover and let stand 2-3 hours. Place mixture on top of double boiler over simmering water. Whisk in egg yolks and continue whisking for 5 minutes until mustard and creamy. Stir in relish and onion. Yields about 1 1/2 cups. Great on hamburgers. Printable version: onion-mustard.txt.
