MARINATED MUSHROOMS
  
500g button mushrooms
1/2 cup water
1 Tbsp lemon juice
1/2 cup red or white wine vinegar
1 small onion, finely chopped
1 small clove garlic, peeled
1 bay leaf
2 Tbsp oil
1 1/2 Tbsp tomato sauce
 
Place mushrooms in a saucepan with water and lemon juice.  Heat
until boiling.  Reduce heat and simmer until tender, 2 - 3 minutes.
Drain and place in a bowl.  In a saucepan, combine vinegar, onion,
garlic and bay leaf.  Heat until boiling.  Reduce heat and simmer
until onion is tender.  Stir in oil and tomato sauce.  Season to
taste.  Pour marinade mixture over the mushrooms.  Cover and
refrigerate overnight.  Remove the garlic and bay leaf before
serving.
