Lime Pineapple Jam

Lime Pineapple Jam
  
4 cups finely chopped fresh pineapple
1-3/4 cups sugar
3 Tbsp. lime juice
1 tsp. grated lime peel
 
In a saucepan, combine all ingredients. Bring to a boil over med.
heat, stirring occasionally. Boil until thickened, about 40 min.
Pour into hot jars, leaving 1/4" head space. Adjust caps. Process
for 15 minutes in a boiling-water bath. Yield about 3 half-pints.
