Kiwifruit Orange Jam 2 sweet oranges 1 lemon 1 1/2 kg (3lb) kiwifruit 6 cups sugar Peel the rinds thinly from the oranges and lemon, using a potatoe peeler, to avoid getting any pith. Put these in a muslin bag, loosely tied. Squeeze the juice from the citrus fruits and put into a preserving pan with the peeled and chopped kiwifruits. Put in the musling bag, containing the peel and simmer altogether until fruit is soft. Add the sugar and boil briskly for about 20 minutes, or until the jam will set when tested. Discard the muslin bag of peels and put the jam into hot dry jars. Seal when cold. Yield:1 3/4 kg (3 1/2 lb) Printable version: kiwifruit-orange-jam.txt.
