Honey-Lemon Jelly 2 1/2 cups honey 3/4 Cup fresh squeezed lemon juice 1/2tsp grated lemon rind 3oz packet liquid pectin Mix the first 3 ingredients and bring to a boil. Add the pectin, return to a boil and boil for 2 minutes. Quickly pour the jelly into steril 1/2pt jars and seal in a boiling water bath for 5 minutes. Printable version: honey-lemon-jelly.txt.
