GREEN TOMATO SALSA 10 c. green tomatoes, cut into chunks 1 c. celery, chopped 4 c. bell peppers, chopped 3 small handfuls dehydrated onions 2 1/2 c. fresh chopped onions 2 (7 oz.) cans green chiles, chopped 2 1/4 tsp. heaped ground garlic 2 tsp. salt, heaping 3 c. cider vinegar 14 shakes Tabasco sauce Boil (good rolling boil) for 20 minutes or put in pressure cooker at 5 pounds pressure. Then take off burner and let pressure go down. Check for taste and seasoning to desired level before canning in pint jars. Printable version: green-tomato-salsa.txt.
