Grape Preserves
4 pounds concord grapes
1/2 cup water
4 pounds sugar
Wash, drain, and remove stems from grapes. Heat grapes and water
to the boiling point and cook until the seeds are free. Rub through
a fine sieve or food mill. Discard skins and seeds. For each cup
of fruit add 1 cup of sugar. Simmer for 30 minutes, stirring
occasionally to prevent burning.
Pour into hot sterilized glass jars and seal. Ladle the hot preserves
into 1 hot jar at a time leaving 1/4 inch heat space. Wipe jar rim
with a clean, damp cloth. Attach lid. Fill and close remaining jars.
Process pints or half pints in a boiling water canner for 10 minutes
(15 minutes at 1,000 feet to 6,000 feet; 20 minutes above 6,000
feet.
