Elderberry Chutney 2 lbs berries 1 cut onion 1 teaspoon ginger 2 tablespoons sugar pinch cayenne pinch mixed spices (allspice, cumin, coriander, mace) 1 pint vinegar Prepare 2 lb of berries by washing them and removing the stalks. Place in a pan and over slow heat bruise to release the juice. Add onion, ginger, 2 sugar, a pinch of cayenne and mixed spices and vinegar. Simmer until the mixture thickens, stir continuously and do not allow to burn. Fill into sterilized jars and close tightly. Printable version: elderberry-chutney.txt.
