Dijon Mustard 2 cups dry white wine 1 large onion, diced 2 small cloves of garlic, minced 4 ounces dry mustard 2 tablespoons honey (choose a neutral flavor) 1 tablespoon vegetable oil 2 teaspoon salt Few drops Tabasco Combine wine, onion and garlic in a small pan; heat to boiling; lower heat and simmer 5 minutes. Pour mixture into a non reactive bowl and cool. Put dry mustard in small saucepan. Strain wine mixture through cheesecloth-line dsieve into the mustard, beating constantly with a wire whip until very smooth. Blend honey, oil, salt and Tabasco into mustard mixtures slowly, stirring constantly. Heat, continuing to stir until mixture thickens (about 5 minutes). Cool, the pour into a nonmetallic container, cover. Chill at least 2 days to blend flavors. Printable version: dijon-mustard06.txt.
