Ripe Cucumber Relish Yield: 6 12 lg cucumbers, overripe ok 8 lg cooking onions 8 red sweet peppers 1 tablespoon turmeric 1/2 cup pickling salt 3 tablespoons mustard seed 3 tablespoons celery seed 5 cups sugar 5 cups white vinegar Cornstarch Peel cucumbers; halve lengthwise; scoop out seeds. Wash peppers; remove tongue and seeds. Peel onions; cut in quarters. Put everything through a mincer with course blade. Add salt to minced veggies and let stand overnight. Drain thoroughly. Add remaining ingredients. Cook 30 minutes, stirring occasionally. Pack in sterilized jars and seal. Printable version: cucumber-relish04.txt.
