Ripe Cucumber Relish
Yield: 6
									 
12 lg cucumbers, overripe ok
8 lg cooking onions
8 red sweet peppers
1 tablespoon turmeric
1/2 cup pickling salt
3 tablespoons mustard seed
3 tablespoons celery seed
5 cups sugar
5 cups white vinegar
Cornstarch

Peel cucumbers; halve lengthwise; scoop out seeds. Wash peppers;
remove tongue and seeds. Peel onions; cut in quarters. Put everything
through a mincer with course blade. Add salt to minced veggies and
let stand overnight. Drain thoroughly. Add remaining ingredients.
Cook 30 minutes, stirring occasionally. Pack in sterilized jars and
seal.
