Golden Coconut Conserve with Rum 14 oz sweetened coconut 4 cups water zest of 1 lemon, slivered fine 5 cups sugar 6 T lime juice 1/2 cup boiling water 1/2 cup raisins 1/4 cup rum Simmer coconut, water and zest, covered 30 mins. Add sugar and 1/2 of the juice. Cook over med-low, uncovered 1 hour. Stir last 15 mins. Gradually stir in water, remaining juice and rum. Simmer 1 min. Stir in raisins, pack into 1/2 pint jars. Seal and process. (BWB or pressure canning is best for this thick condiment) Printable version: coconut-conserve.txt.
