Cherry Walnut Relish 1 cinnamon stick 1/2 teaspoon whole cloves 1/4 teaspoon cardamom seeds 4 cups stemmed and pitted cherries (sour or sweet) 1 1/2 cups chopped walnuts 1 cup dried sour cherries 3/4 cup sugar 1/4 cup honey 1 1/2 cups cider vinegar Tie spices in a cloth bag or cheesecloth and tie to pot handle so it hangs in the mixture. Mix all other ingredients in non-reactive pan and simmer for about an hour, or until the sauce thickens. Stir occasionally, to keep from sticking. Ladle into sterilized half pint jars, leaving 1/2" headspace and seal with two piece lids. Process in BWB for 10 minutes. Printable version: cherry-walnut-relish.txt.
