Blueberry Chutney 1 1/2 pts. (about 3 c.) fresh blueberries, sorted, washed or frozen blueberries without sugar 1/4 cup chopped, mild onion 1 Tbsp. grated fresh gingerroot 1/2 cup firmly packed light brown sugar 1/3 cup cider vinegar 1 Tbsp. cornstarch 1/4 tsp. salt 1 (3 inch) cinnamon stick In large saucepan, combine all ingredients. Bring mixture to boil over medium heat, stirring frequently. Boil 1 minute. Remove cinnamon stick, Cool. Cover, refrigerate. Serve as a condiment with meats and cheeses (2 cups). MICROWAVE DIRECTIONS: Combine all ingredients in 8-cup microwave-safe measuring cup. Microwave on HIGH for 12 to 15 minutes or until mixture boils and is slightly thickened, stirring twice during cooking. Remove cinnamon stick. Cool. Cover, refrigerate.
