Apricot Peach Honey Put about 3/4 pound of dried apricots in the pressure cooker covered with water plus about a half inch. Bring to pressure, cook less than a minute, then let the pressure drop on its own. Peel about 8 peaches and put them into a blender with a whole orange, (skin and all; no seeds) chunked. Blended very well. do the same with the drained apricots. Combine the two mixtures. Add an equal measure of sugar and cook for about an hour, over low heat, checking and stirring often. Six half pint jars and six 4-oz jars, processed in a bwb for about 8 minutes. Printable version: apr-peach-honey.txt.
