Sausage Bake with Peppers 1 lb Italian sausages sweet or hot 4 potatoes peeled and sliced 1 medium onion slices and separated into rings 2 green peppers cut into strips 1 red pepper cut into strips oregano to taste pepper to taste Layer potatoes and vegetables in a baking dish sprayed with a non stick spray. Pierce sausages with a fork so juices can run out and place on top of the vegetables. Sprinkle with oregano and black pepper. Cook at 375F for 45 minutes to 1 hour, stirring mid way through so that vegetables can get coated in the juices. If the potatoes are still quite firm when you stir you can cover the dish for 15-20 minutes. Printable version: sausage-bake.txt.
