Mississippi Barbecued Pork 2 1/2 lbs pork butt roast 1 TBS corn oil 4 oz can tomato Sauce 1/4 cup cider vinegar 1/4 cup Worcestershire sauce 1/4 cup brown sugar 1/2 teaspoon celery seed 1/2 teaspoon chili powder salt and pepper to taste Dash or two of red pepper sauce (to taste) These amounts need to be increased for larger roasts Heat oven to 350 degrees or can cook on med-Low on stove-top. Cook with tight fitting lid on pan to keep in the juices. Randomly pierce the roast with a knife then brown it all over. Combine the remaining ingredients in a bowl then add to the roast and bring to boil, then reduce the heat to a simmer. Cover and either keep cooking (turning every now and then) or place in the oven and bake for 2 hours or till fork tender and meat falls from the bone. While baking one can baste and turn about every 45 mins or so.
