Pork with Artichokes l pound pork tenderloin cut into l" medallions 2 Tbsp olive oil l small shallot or onion l Tbsp capers l tsp. dijon mustard l can artichoke hearts, drained and cut in half l/4 cup chicken broth Heat oil in a skillet over medium high heat. Add the pork and cook 3-4 minutes per side. Put pork on a plate and keep warm. Reduce heat to low and add the shallot/onion and capers to the same pan. Cook l-2 minutes, add the other ingredients and cook until heated. Spoon mixture over the pork and enjoy. It was excellent. Printable version: artichokes.txt.
