Easy Pork Adobe 2 pounds thin-cut center loin pork chops non-fat cooking spray 14-oz can stewed tomatoes 1/4 cup water 2 Tbsp tomato paste 4-oz can chopped mild green chilies chili powder to taste (optional) 1-1/2 tsp ground cumin Trim all visible fat from the pork chops. Spray large skillet with cooking spray and brown the chops over medium-high heat for about 2 minutes each side. Turn off heat. In a bowl mix together stewed tomatoes with juice (chop up small if necessary), water, tomato paste, chili powder, green chilies and cumin. Pour sauce over chops, distributing thoroughly, bring to a boil, cover and simmer on low for 25 minutes. While the meat is simmering you can prepare one of those boxed mixes of Spanish rice to go with the pork chops. Serves 4
