Easy Pork Adobe

2 pounds thin-cut center loin pork chops
non-fat cooking spray
14-oz can stewed tomatoes
1/4 cup water
2 Tbsp tomato paste
4-oz can chopped mild green chilies
chili powder to taste (optional)
1-1/2 tsp ground cumin

Trim all visible fat from the pork chops. Spray large skillet with
cooking spray and brown the chops over medium-high heat for about
2 minutes each side. Turn off heat. In a bowl mix together stewed
tomatoes with juice (chop up small if necessary), water, tomato
paste, chili powder, green chilies and cumin. Pour sauce over chops,
distributing thoroughly, bring to a boil, cover and simmer on low
for 25 minutes.  While the meat is simmering you can prepare one
of those boxed mixes of Spanish rice to go with the pork chops.
