Zucchini Pie
5 cups zucchini; peel & slice
4 tablespoon cornstarch
1 cup sugar
1/2 cup brown sugar
2 teaspoon cinnamon
1/2 teaspoon nutmeg
3 tablespoons lemon juice
2 tablespoons butter
2 unbaked pie crusts
Put zucchini into water and bring to a boil. Let stand for 5 minutes.
Drain well. Put zucchini into pie shell.
Mix together remaining ingredients and spread over zucchini. Put
on the top pie crust. Bake at 350 degrees for 1 hour or until golden
brown.
