Strawberry Yogurt Pie Yields 4 servings. 4 sheets phyllo dough 2 cup strawberries, sliced 2 cup (8 oz.) non-fat plain yogurt 1/4 cup confectioners' sugar 1 pkg. powdered gelatin 1/4 cup water Butter flavored cooking spray Preheat oven to 375 degrees. Place yogurt in double coffee filter and let drain for 15 minutes. Spray a 9 inch glass pie plate with cooking spray. Spray 1 sheet of phyllo with cooking spray. Fold sprayed sheet in half and place in pie plate. Continue procedure with all sheets, placing each sheet in pie plate at angles to create an asterisk pattern, spraying with cooking spray after each layer. Fold excess phyllo inward. Pierce phyllo crust with fork in several places and bake for 12 minutes. Set aside. Mix gelatin with water in the top of a double boiler. Let sit 5 minutes to soften; place over boiling water to melt. Beat together yogurt and sugar in a large bowl, then fold in gelatin. Fold berries into yogurt mixture and pour into crust. Refrigerate pie for 2 hours before serving. Printable version: yogurt02.txt.
