Shaker Lemon Pie 2 lemons 4 T cornstarch 1 1/4 C sugar 3 egg yolks, beaten 2 C boiling water 3 egg whites 1/8 t salt 2 T sugar 1/2 T lemon juice 1 baked pie shell Roll lemons thoroughly; grate off the yellow rind and keep. Squeeze out juice. Make a boiled custard of cornstarch, sugar, beaten egg yolks and water. Add rind and juice of lemons. Stir until smooth and turn into baked pie shell. Beat egg whites with salt; when stiff gradually add sugar and 1/2 T lemon juice. Top custard with meringue and bake in slow oven until well browned. Printable version: shaker-lemon02.txt.
