Easy Pumpkin Spice Cobbler 3 large eggs beaten 15 oz can of pumpkin 12 oz can evaporated milk 1 cup sugar 1/8 tsp salt 1 1/2 tsp ground cinnamon 1 tsp ground ginger 1 tsp vanilla extract 1 box Betty Crocker spice cake mix 1 1/4 cup melted butter or margarine 1 cup chopped pecans (optional) Mix first 8 ingredients in large bowl. Pour into a 13x9 glass baking dish. Sprinkle 3/4 of package spice cake mix evenly on top of mixture. Drizzle with melted butter. Bake 350F preheated oven for 30 minutes. Top with chopped pecans and bake additional 15 minutes. Note: if you do not use nuts bake the additional 15 minutes anyway. Printable version: pumpkin-cobbler.txt.
