Pear and Cranberry Pie
8 Servings

2/3 cup packed light brown sugar
2 eggs 
1 Tbsp. lemon juice 
1 tsp. vanilla
1/8 tsp. almond extract
3/4 cup all-purpose flour
1-1/2 tsp. baking powder
1/4 tsp. salt
1-1/2 cup chopped peeled pears
2/3 cup dried cranberries
1/2 cup  coarsely chopped pecans
1 (6 oz) graham cracker pie crust
Mint sprigs for garnish
Cranberry Pecan Frozen Yogurt 

Preheat oven to 350 degrees F.  Beat sugar eggs lemon juice vanilla
and almond extract in medium bowl until well blended.  Beat in
combined flour baking powder and salt; stir in pears cranberries
and pecans. Spoon mixture into crust.  Bake at 350 degrees F 30
minutes or until filling is set and toothpick inserted in center
comes out clean. Garnish with mint sprigs; serve warm or chilled
with Cranberry Pecan Frozen Yogurt if desired.



Cranberry Pecan Frozen Yogurt

1 quart Reduced-fat vanilla frozen yogurt slightly softened
1/2 cup Dried cranberries
1/2 cup Toasted pecans     

Mix all ingredients in bowl; freeze until firm 4 to 8 hours.
