Blueberry-Peach Cobbler Yield: about 6 servings. 2 Tbsp sugar 2 Tbsp brown sugar 1 Tbsp cornstarch 1/2 cup water or peach nectar 1 Tbsp lemon juice 2 cup peeled sliced fresh peaches 1 cup blueberries 1 cup all-purpose flour 1/4 cup sugar 1 1/2 tsp. baking powder 1/2 tsp. salt 1/2 cup milk 1/4 cup butter, softened In a saucepan, combine first 5 ingredients. Bring to a boil, stirring until thick. Add fruit and pour into a 2 quart baking dish. For topping, combine flour, sugar, baking powder and salt in a mixing bowl. Stir in milk and butter. Spread over fruit mixture and bake at 375 for 50 minutes or until topping is golden brown and tests done. Serve warm. Printable version: peach-blue-cobbler02.txt.
