Navy Bean Pies 2 cups cooked navy beans 1 stick butter 2 tablespoons flour 4 eggs 1 teaspoon nutmeg 2 cups sugar 1 can evaporated milk 1 teaspoon cinnamon 2 tablespoons vanilla 8 or 9 inch pie crusts Cook beans two days in advance after they have soaked over night. Cook them until soft. Let them then sit in a fridge for at least a day. Get a food mill to grind the beans and get the shell off of them. All you need is the meat of the bean. Once you do this, add the rest of the ingredients to a blender and blend. Add beans and re-blend. Add to pie crust. This mixture should make three pies. But if you use the deep crust shells, you will only get two. Bake at 425 degrees for 15 minutes. Reduce heat to 350 degrees and bake for another 35 minutes or until knife inserted in center comes out clean. Printable version: navy-bean02.txt.
