- Lemon Tart Filling 2 egg yolks small piece butter juice of large lemon 1 dessertspoon cornflour 1 cup sugar teaspoon grated lemon rind 1 heaped dessertspoonfull custard powder. Mix all ingredients and stir in 1 cup of boiling water, and keep stirring on stove until thick, (use a wooden spoon). When cool spread in pastry case. Beat egg whites with a pinch of salt and cream of tartar, add little sugar spread on top. Brown lightly in oven. Printable version: lemon-tart03.txt.
