Lemon Sponge Pie 2 lemons 2 eggs 1 cup milk 1 cup sugar 3 tbsp flour 1 tbsp butter Cream butter, sugar and flour. Seperate eggs and add yolk to sugar/butter. Add lemon (juice plus some zest) and then milk. Quickly stir in stiffly beaten egg whites. Bake in raw 9" pie shell at 400 for 15 minutes, then for 25-30 at 375 degrees. Test top layer like cake. This comes out like lemon pudding with a foamy cake layer on top. Printable version: lemon-sponge.txt.
