LEMON-PEAR PIE 1 beaten egg 1 cup sugar 1 tsp grated lemon peel 1/4 cup lemon juice 1 Tbsp. butter or margarine 29-oz can pear halves Pastry for 2 crust 9 inch pie In sauce pan combine egg, sugar, peel, lemon juice, and butter. Cook and stir over low heat till thickened and bubbly; remove from heat. Drain and dice pears.Line 9-inch pie plate with pastry.fill with pears. Pour lemon mixture over pears. Adjust top crust; seal and flute edges, Cut slits for escape of steam. Bake at 400 till golden brown, about 35 minutes. Printable version: lemon-pear.txt.
