Ice-Cream Mince Pie
1 quart vanilla ice-cream
1 cup prepared mincemeat, well drained
1/4 to 1/2 tsp. rum flavoring
1 baked 9 inch pastry shell
Stir ice-cream to soften. Stir in mincemeat and flavoring. Spoon
into cooled pie shell. Freeze till firm. Before serving, add a
snowy wreath of whipped cream for decoration and poke in candy canes
at an angle, or use 1 cup crushed peppermint stick candy for garnish.
