Guava Meringue

Guava Meringue Pie
Yield: 6-8 serving

3/4 cup sugar
4 Tbsp cornstarch
1/4 tsp salt
1 cup boiling water
2/3 cup guava concentrate (6-oz can)
2/3 cup water
2 egg yolks, beaten
2 Tbsp butter
2 Tbsp lemon juice
9-inch baked pie shell

3 egg whites
1/4 tsp cream of tartar
6 Tbsp sugar

Combine first three ingredients in sauce pan. Add boiling water,
stirring slowly. Add guava concentrate and 2/3 cup water, cook
until smooth and thick over medium heat. Add beaten egg yolks slowly
to cooked mixture. Continue cooking 3 minutes. Remove from heat,
add butter and lemon juice. Cool and pour into baked pie shell and
cover with meringue (directions follow).

For meringue, combine eggs whites and cream of tartar. Beat until
stiff peaks form. Gradually add sugar, beating until stiff peaks
form and sugar is dissolved. Spread over cooled pie filling, sealing
to edge of pastry.  Bake at 350 for 12-15 minutes.
