Grasshopper Pie 1/12 cups chocolate cookie crumbs 1/4 cup of melted butter Mix and press into greased pie plate, and bake at 350F for 10 minutes. 32 large or 3 cups of miniature marshmallows 1/2 cup milk 1/4 cup creme de menthe 3 Tbsp creme de cacao 1 1/2 cups chilled whipping cream few drops of green food colour. Heat marshmallows and milk over medium heat, stirring constantly, just until marshmallows melt. Chill until thickened, then blend in liqueurs. In chilled bowl, beat cream until still. fold marshmallow mixture into whipped cream. Fold in food colour, if desired. Pour into prepared and cooled crust. If desired, sprinkle with grated semisweet chocolate. Chill at least 3 hours until set. Since I couldn't get marshmallows here, I used to make my own using 2 Tbsp gelatine 3/4 cup water 3/4 cups sugar 3/4 cup powdered sugar 1 egg white Soften the gelatine in the water. Add sugar, and bring to the boil, stirring. Boil 8 minutes without stirring. Cool. Beat egg white till stiff, fold in powdered sugar, then slowly pour in cooled gelatine. Beat until white and thick.
