French Silk Pie 1/2 cup sugar 1/3 cup flour 1/4 tsp salt (optional) 2 cup milk 2 squares chocolate (unsweetened or semi-sweet) 3 egg yolks 3 Tbsp butter 1 tsp vanilla extract 1 cup heavy chipping cream, whipped to stiff peaks chocolate shavings (unsweetened or semi-sweet) 1 prepared 9" pie crust In two quart sauce pan mix sugar, flour, salt. Add milk, stir in chocolate and cook over low heat. Stir constantly until chocolate is melted. With wire whisk beat until chocolate is blended. Increase heat to medium. Cook, stirring constantly until mixture thickens and boils (about 10 to 15 minutes), then remove from heat. Beat the egg yolks with a small amount of the chocolate mixture. Add yolks to chocolate mixture, stirring rapidly. Return pan to heat and cook over low heat until very thick and mounds when dropped from a spoon (do not boil). Remove from heat. Stir in butter and vanilla, then pour into pie crust. Cover surface with plastic wrap and refrigerate until set, about 4 hours. Just before serving spread whipped cream onto pie and garnish with shaved chocolate. Printable version: french-silk07.txt.
