No-Crust Coconut Pie
Makes 1 pie (6 servings)

6 tablespoons butter
1 cup sugar or to taste
2 tablespoons sugar
2 tablespoons cornstarch
12 oz can evaporated milk
1 tablespoon vanilla extract
3 eggs
3/4 to 1 cup sweetened coconut flakes

Cream butter, sugar, and cornstarch in a bowl until light and fluffy.
Add evaporated milk, vanilla, and eggs; mix well. Stir in coconut.
Spoon into well-greased and floured 9-inch deep pie plate, placed
on a cookie sheet.  Bake at 350 for 35 to 40 minutes or until set
and brown.
