Hatch Chile Apple Cobbler Makes 8 servings 5 or 6 Granny Smith or Gala apples, peeled and sliced 2/3 cup packed brown sugar 1/2 cup roasted, peeled, chopped Hatch chiles 1 teaspoon vinegar 1/4 teaspoon cinnamon 1/4 teaspoon salt 1/8 teaspon allspice 1/8 teaspoon nutmeg 1 cup sugar 1 1/4 cups flour grated zest of 2 lemons 1/8 teaspoon salt 1/8 teaspon cinnamon 1/8 teaspoon nutmeg 3/4 cup butter 2 tablespoons heavy cream Combine the apples, brown sugar, chiles, vinegar, 1/4 teaspoon cinnamon, 1/4 teaspoon salt, allspice and 1/8 teaspoon nutmeg in a bowl and mix well. Spoon into a greased 9-inch baking dish. Combine the sugar, flour, lemon zest, 1/8 teaspoon cinnamon and 1/8 teaspoon nutmeg in a bowl and mix well. Cut in the butter until crumbly. Stir in the cream. Spread over the apple mixture and press firmly. Bake at 375F for 45 to 50 minutes or until brown and bubbly. Printable version: chile-app-cobbler.txt.
