Easy Blueberry Cobbler Yield: 4 to 6 servings. 3 cups fresh blueberries 2 teaspoons lemon juice 1/2 teaspoon vanilla 1 1/2 cups biscuit mix 3/4 cup sugar 1/2 teaspoon cinnamon 1/4 teaspoon nutmeg 1/4 cup butter cut up into small pieces Toss berries with lemon juice and vanilla and place in a greased 8 inch square pan. Combine biscuit mix, sugar, cinnamon and nutmeg. Sprinkle over the berries. Dot evenly with the butter. Bake in a 350F oven about 40 to 50 minutes. Serve warm or cool. Scoop out portions from pan.
