BLACK FOREST CHERRY PIE 2/3 cup sugar 3 tbs. cornstarch 1/4 tsp. salt 2 cups milk 2 slightly beaten eggs 2 tbs. butter 1 tsp. vanilla 2 oz. semi-sweet chocolate, melted 8-inch baked pie shell 16 oz can pitted, dark sweet cherrys, drained and halved (about 2 cups) 1/2 cup whipping cream Combine sugar, cornstarch and salt. Gradually stir in milk. Cook and stir until bubbly and cook 2 minutes more. Stir small amount of the hot mixture into eggs then return to hot mixture and cook 2 minutes more. Remove from heat and add butter and vanilla. Stir 1/2 cup of this filling mixture into the chocolate. Spread chocolate mixture in bottom of pie shell. Cover surface of the rest of the filling mixture with plastic wrap and cool 30 minutes. Arrange cherry halves, cut side down, on chocolate, resrving 8 halves. Spread on filling mixture and chill well. Whip cream and spoon on top arranging reserved cherry halves decoratively. Printable version: blackforest02.txt.
