Recipe Archives->Pasta->Zucchini Noodles
Zucchini, Peas and Noodles Serves 8 3 medium zucchini unpeeled 1 cup frozen green peas 8 oz egg noodles cooked olive oil salt pepper basil garlic powder fresh grated Romano cheese sauteed mushrooms, optional heavy cream, optional butter, optional Coarse cube zucchini. Place in a pot and cover with water. Bring to a boil. Shut off heat and cover and let sit 8 to 10 minutes or until tender (do not let zucchini get too soft). Cook egg noodles and drain. Combine zucchini, noodles and peas and mix well. Season to taste with coarse salt, fresh grated black pepper, dried or fresh basil and garlic powder (or fresh minced). Grate on and mix in cheese to taste. Note: For a creamy recipe, mix in some heavy cream and butter to taste. One may also use fettuccini instead of wide noodles. Sauteed mushrooms are also tasty.
