Tomato Garlic

Chopped Tomato & Garlic Egg Noodles
 
8 oz. wide egg noodles
1 medium plum tomato chopped and seeded
3 cloves garlic minced fine
olive oil
black pepper
Parmesan or Romano grated cheese
 
Cook egg noodles so they're al dente; drain.  While they're in the
strainer, add olive oil, garlic and tomato to the pot and cook just
until hot - about 1-2 minutes.  Add noodles back to pot and toss.
Serve with lots of black pepper and grated cheese.
