Recipe Archives->Pasta->Spinach Bacon
Spinach and Bacon Pasta Serves 8 1 lb wide egg noodles 3/4 cup Italian dressing 1 pint cherry tomatoes, havled 1 pound boneless, skinless chicken breasts, chopped 6 oz bag baby spinach leaves 1 cup shredded Italian cheese blend 8 slices crisply cooked bacon, crumbled Cook noodles as directed on package. Drain, reserving 1/2 cup of the cooking water. Heat dressing in a large skillet over medium heat. Add chicken, cook and stir 5 to 7 minutes or until cooked through. Add tomatoes, cook 1 minute, stirring occasionally. Stir in noodles and reserved 1/2 cup cooking water. Remove from heat. Add spinach, 1/2 cup of the cheese and the bacon. Toss to combine. Sprinkle with remaining 1/2 cup cheese. Printable version: spinach-bacon.txt.
