Peanut Butter Pasta 1/2 pound spaghetti, cooked and drained 1/2 cup chopped onion 1/2 cup green pepper, slivered 1 tablespoon oil 1/2 cup warm water 4 tablespoons peanut butter 2 diced tomatoes 1 1/2 cups tomato juice 1/2 teaspoon oregano coarsely chopped peanuts While spaghetti cooks, saute onion and pepper in oil for about 5 minutes until wilted. Stir water gradually into peanut butter until smooth and add to pan with tomatoes, tomato juice, and oregano. Bring to a boil, stirring occasionally to make a smooth sauce. Spoon hot sauce over pasta and top with chopped peanuts. Printable version: pasta-pb.txt.
